I decided to make this recipe inspired by Martha Stewarts version of tomato and egg on toast! This easy breakfast could be made in 10 minutes flat! A really simple yummy breakfast full of nutrients and flavour to start the day!
- 2 eggs
- 10 grape tomatoes
- 1 avocado
- 1 clove of garlic
- 2 pcs of thinly sliced whole wheat bread
- salt and pepper
I first recommend you to start with the tomatoes. Halve them and put it in a small pan coated with a little bit of olive oil. On a medium heat you want to char the tomato, roast them for 2 minutes then flip and roast the other side for another 2 minutes. Toast your bread, grab your clove of garlic and rub it on your toast evenly. Slice your avocado and fry your egg! I like a minimal amount of brown caramelization on my egg so I cook it on a really low heat till the egg white turns opaque. Assembly starts with the toast, on top of that is your roasted tomato, sliced avocado, then your egg! Finish with salt and pepper and you’re set!
