Acai Bowl!

Acai is one of the worlds super fruits! It’s a berry full of antioxidants that is great for boosting your immune system and metabolic function. It’s such a huge trend right now, but not without good reason! It’s good for you and it taste amazing! This recipe is a thick, rich, sweet smoothie that kind of reminds me of ice cream! Give it a try for an easy breakfast or  if you’re like me you’ll enjoy it as a dessert!

The process for me was actually pretty hard! Acai is almost impossible to find in Vancouver! I went to my local grocery stores like Superstore, Walmart, Safeway and Price Smart foods with no luck. I then decided to do some research where I could find some acai puree. One website told me that these easy puree packets were sold at Costco. I went there with no luck once again. Being the impatient person I am, I decided to give up and do research on how to make this acai bowl without the puree. One website had told me that I could use some sort of concentrate. So I reduced 100% pure acai juice by half and froze it in my ice cube tray.

IMG_4858Unfortunately when I made the bowl, it was too loose of a texture that my fruit wasn’t able to hold up on top of the mixture. It was more like a soup than an acai bowl! The wrong consistency made me go back to the drawing board. I gave one more grocery store a shot. Whole Foods, it was a bit further away from me, but I knew they sold a lot of health food items there so maybe they would have some damn acai. BINGO! They sold acai puree, my dreams and prayers were answered!

Serving size: 2

Ingredients:

  • 1 packet of acai puree
  • 1 banana
  • 2 dates
  • 1/2 papaya
  • 1/2 mango
  • 1/4 cup of frozen blueberries
  • 4 cubes of frozen acai concentrate
  • 1 cup of acai juice
  • your choice of any fruit and nut toppings

Method:

I packed this bowl with so much fruit! I put the packet of acai puree in the blender with a banana, some peeled and deseeded papaya, some mango, frozen blueberries, dates and to ensure that the acai flavour was present I added the concentrate ice cubes that I made and the juice. Blended this all together until its smooth and topped it with chopped fruit. I added some of my honey granola in my previous recipe as well some hemp hearts.

This can be topped with any fruit! Treat it like ice cream or yogurt!
